Rollin' with it!

So, the life of a housewife is ever changing and a good housewife can roll with it! I am one of those housewives that can have a dinner planned out and have everything go to shit and pull something out of my @$$ and still have dinner on the table at the right time!

Yesterday I was thinking about what I wanted to make for dinner tonight, and I had a meal planned out, but Mike told me late last night that we are going to a potluck with his coworkers for a meeting. Now some people might freak out and be like, "WHAT!?!?! I have to make something for tomorrow???" But not this girl! I've decided to make some Roasted Piquillo Peppers stuffed with Chorizo and Manchego Cheese over a Baby Arugala Salad with a Sherry Vinegar and Almond Dressing. Booya! :)

I went to work this morning for a few hours to do some things that I didn't get to complete last week. We are getting ready for our NovemberFest on November 4th and are looking for anyone who would LOVE to volunteer for a great cause! The Healing Center offers grief services to adults, children and families and I love every minute that I get to spend with everyone involved in that amazing place! So if you want to volunteer then, let me know and I can get you in contact with the right person! :)

I ran to the store after work and came home and took the boys for a nice walk; and then it was time to get cooking. Well...after a few pictures...

But I had to get to work preparing my dish for tonight, so I got everything ready...


After some chopping, browing and mixing...time to stuff the piquillo peppers...


We are ready to go! Now all we need to do is throw these babies in the oven at Mike's co-worker's house!



Rollin' with it, is one of the things that I'm able to do when it comes to dinner. I admit there are times when things go to shit and I get irritated because I want nothing more than to put an amazing meal on the table for my husband every night. I could never let him down, he's just happy to come home and see me, he wouldn't care if we had frozen pizza every night. However, I'm not the kind of housewife that spends her day at the Country Club with Mitzy and Buffy talking about the ladies that we hate and how we can't wait to go get our hair done. I'm the kind of housewife that spends her day taking care of our dogs, wondering what I'm going to cook for dinner and wondering if Ahn is working at SuperCuts so I can get my mop cut!

Being a housewife isn't for everyone. There was a time that both Mike and I didn't think I'd be able to be happy with just being a housewife. However, I've managed to fill my days with amazing people, and honing my talents in the kitchen. And I do it all to see the smiles on people's faces. I only want to be a bright spot in people's day, and I try my hardest to say hello and make conversation with everyone, from the checker at QFC to the people I see walking down the sidewalk. I know a lot of people who don't like chit chat, but I can think back to days in my life where I was so down and out and one random person stopped, asked how I was and actually CARED to hear what I said. It only takes one person to bring back your faith in your fellow mankind; and I challenge you to smile at someone tomorrow instead of walking with your head down. I challenge you to ask, "How are you?" And actually mean it. I challenge you to care about the people around you, not just your family and friends, but the people you interact with on a daily basis who you normally see as just in a service role. Say hi, smile, and take one minute out of your precious day to interact with someone else. :)
